Cookin' Clean, Eatin' Good & Feelin' Better

CREAMY DAIRY FREE RANCH

This cool & creamy ranch is just about a weekly staple in our household.  When my husband and I embarked on our first Whole30, I started making this as part of our weekly meal-prep. It took a few times to get it just right, but now i've found a perfect way to make it each time. My husband, who was not big on ranch (he's more of a blue cheese enthusiast), was reluctant to try it at first.  He and I both were shocked with how much he loved it.  Now every Sunday it's part of his request for the week ahead!

We top this on salads, use it as a base for paleo pizza, dip our chicken tenders in it, and so much more.  It also makes a great side dish to take to a party or get together!  Once a month my mom hosts a paint party where a bunch of ladies get together to paint and get crazy.  It's a lot of fun, and everyone takes a dish to share.  I took this ranch with some veggies and it was a big hit!  (No one even knew it was dairy-free until I told them!)

Get your ingredients together!
Things to know:
  • This ranch will stay good in your refrigerator for up to 7 days!
  • You can use fresh herbs or dried.  I use dried, just because I make it every week, so it is cheaper and easier to stock up on dried herbs.
  • This recipe makes about 9oz of ranch.  I find this is good for just my husband and I, but if you have a larger family, feel free to double it!
WHAT YOU NEED:
  • 1 cup Mayo (I use my homemade mayo which you can find here. Primal Kitchen also make a great paleo mayo.  If you are not following a paleo or whole30 diet, feel free to use whatever mayo you like.)
  • 1/4 cup coconut milk.  (I use Thai Kitchen's organic unsweetened.) If your coconut milk has separated from the cream, make sure to blend it first.
  • Juice from 1/3 of a lemon
  • 3 tsp dill
  • 1 1/2 tsp chives
  • 1 1/2 tsp parsley
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Mason jar or empty container.  (I use these.)

WHAT YOU DO:
  • Pour your mayo and coconut milk into blender.
  • Add in your herbs and spices.
  • Blend on high for 30-60 seconds, or until evenly combined.
  • Pour into your jar or container, and enjoy for up to 7 days!
  • Top with fresh dill, if you desire.
YES, it's really that easy.
